I just setup Windows Server 2003 for the first time. At the first login, a
dialog screen popped up and asked me if I wanted to update any security
patches. I didn't want to do this so I clicked "Finish". I was warned by a
subsequent dialog box that the machine would enable all inbound connections.
I clicked ok and the window went away. Now I want to see al those choices
in that window again but how do I get it back?

That window will only pop up on the 1st booting after installation.
Even with bringing back up that window, it will not help much, since your
machine is already exposed to the internet.
What I suggest is that you go to www.windowsupdate.com and make sure that
all critical updates are installed.
Next, check and make sure that WInodws Firewall is turned on (in Control
Panel). You might want to run Security Configuration Wizard to help tweaking
your server
