Is it possible for 1 active directory ( 2003 ) to host 2 different domain
eg.: domain1.com and domain2.com

The end result for this is to be able to use 1 exchange server 2003 for the
hosting of the 2 domains.

You install AD to make a member server a domain controller. A domain
controller can only be in one domain.

To have domain1.com and domain2.com you need at least 2 domain controllers.

One A.D. domain can have a single Exchange org which hosts mail for multiple
domain names. All you need to do is create a recipient policy for whatever
domains Exchange should be responsible for.

You don't need multiple AD domains to host email addresses for multiple email
domains. I host about 6 email domains out of a single org on a single domain
just fine. It is all about recipient policies. You should really take this
question to an Exchange group though.

Active Directory can contain multiple domains. Multiple domains can
participate in one Exchange Organization.
